Ingredients
- 2 lb. (2 tubes) pork breakfast sausage
- 1 medium onion, diced
- 2 (15 oz) pinto beans, rinsed and drained
- 1 (15 oz) can corn, drained
- 1 (15 oz) can fire-roasted tomatoes, drained
- 1 (32 oz) box of beeef broth
- 2 (1 oz) packets taco seasoning mix (abou 4 Tblsps. total)
- Optional: jalapenos slices to taste
- Optional toppers: cilantro, sliced avocado, shredded cheddar cheese
Directions
- Pour small amount of olive oil in large pot. Add meat and onions. Cook for about 10 min. until meat cooked through. Chop meat with large spoon as it cooks to make it crumble.
- Add beans, corn, tomatoes, jalapenos if desired, and taco seasoning. Add broth and mix everything well. Bring to a boil, reduce heat and simmer for about 5-10 min., until soup is piping hot.
- Ladle into bowls and garnsh with desired optional toppers.
