Ingredients
- 1 12 oz. pkg sliced bacon. Needs to be cooked, drained, & crumbled. You can buy it that way or prep it yourself
- 1 onion, chopped
- 1/2 cup chopped fresh parsley (can sub 1 tsp dried parsley)
- 3 tbsp. butter
- 2 cloves garlic, minced
- 3 tbsp. all-purpose flour
- 1/2 cup milk
- 1 cup half-n-half
- 1 cup chicken broth & 3 broth cubes
- 1 12 oz. can creamed corn
- 1 12 oz. can corn, drained
- 2.5 tbsp. cream cheese (pre-melt in microwave)
- 1 tsp. adobo seasoning
- black pepper & cajun seasoning to taste
Directions
- Combine onion, parsley, butter, and minced garlic in large pot over medium heat.
- Cook & stir until onions are tender (~5 minutes)
- Whisk in flour to make a thick paste.
- Whisk in milk, chicken broth, and cubes & seasonings until chowder thickens slightly.
- Stir in crumbled bacon and serve hot.
As an alternative, you can omit bacon and substitute small chunks of cooked chicken. Can also add stalk or two of celery and carrot sticks for more nutrition.
